Recipe for "Mrs. Duel's Four Egg Sponge Cake" -
1 cup flour, sifted with one teaspoon baking powder
4 eggs
1 cup sugar
4 tablespoons cold water
1 teaspoonful vanilla
Beat yolks of eggs, add the sugar, then cold water and sifted flour. Fold in beaten whites. Bake in moderate oven, forty five minutes.

This recipe is very similar to the one that was my mother's recipe except that she added some freshly grated lemon rind to the recipe because we all love that little lift that lemon zest gives to a sponge cake. We use homemade sponge cake for a lot of desserts in our family. Just love that flavor so much as it bring back great childhood memories.
